ice cream casserole

this is a fav of almost everyone
when I was youner this was a birthday request from my aunt. I loved it.

doesn't it just look complicated.
You'll laugh at how easy it is.

box of 12 ice cream sandwhiches
cool whip
caramel
chocolate syrup
crunch up whatever candy you like

unwrap sandwhiches do one layer in an 8x8 pan
then layer cool whip
drizzle caramel and chocolate syrup
more sandwhiches
more cool whip
more caramel and chocolate syrup
sprinkle candy topping
refrigerate for several hours to set.
slice and
serve.

call it a casserole to defer all children from wanting any.
seriously.
it works.

cheesecake stuffed strawberries

cheesecake stuffed strawberries

easy + pretty for a brunch, little treat, or just because...
24 large strawberries hulls removed
12 ounces cream cheese
1 teaspoon vanilla
3 Tb confectioners sugar
1/2 cup almonds chopped fine in blender

cut the stem and as deep as you can into the berry as long as you don't cut through..

soften cream cheese, whatever route works for you. I just bought whipped.. :) or you could microwave for a few seconds

mix with the vanilla and sugar... until smooth to create a filling... add more depending on what sweet factor your going for.

spoon or pipe into each strawberry hole.

dip cheesecake filled in, into the nuts... covering the cheesecake filling

chill. eat.

Berry Cookie Cobbler

Berry Cookie Cobbler
This is easy, easy, easy—delicious, delicious, delicious. You'll look and feel like a professional baker when this beautiful dessert comes out of the oven. If the filling bubbles over a bit in baking, leave it (it adds a mouthwatering appeal). I let it cool just a little and serve it with a scoop of vanilla ice cream. Yum.Serves 8
2 bags (12 ounces each) frozen mixed berries, thawed
1 container (21-ounce) apple pie filling, Comstock®
1/3 cup granulated sugar, C&H®
1 1/2 teaspoons ground cinnamon, McCormick®
1 roll (18-ounce) prepared sugar cookie dough, Pillsbury®
Vanilla ice cream, Dreyer's®
Prep time: 5 minutes
Cooking time: 45 minutes

PREPARATION:Preheat oven to 350 degrees.
In a large bowl, mix berries, apple pie filling, sugar, and cinnamon.
Transfer fruit mixture to an 8x8x2-inch baking dish.
Crumble cookie dough over fruit, covering thickly and completely.
Bake uncovered until cookie crust is golden and crisp, and juices bubble thickly, about 45 minutes.

Serve warm with ice cream.
