apple cider donuts...

Last year I went to the apple orchards, and waited in line an ungodly amount of time to get some apple cider donuts. I had never had them, but I could smell them.
I was hooked.
These don't come close, but ... they are so yummy. A definite rare treat in this house, and although they take some time... They are good.... so good....
enjoy.

1 cup Apple Cider

¼ cups Butter, Softened
1 cup Sugar
2 whole Eggs
½ cups Buttermilk
5-½ cups Flour, Divided
2 teaspoons Baking Powder
1 teaspoon Baking Soda
1 Tablespoon Cinnamon
¼ teaspoons Nutmeg
⅛ teaspoons Cardamom
½ teaspoons Kosher Salt
1 cup Granulated Sugar
1-½ Tablespoon Cinnamon
Vegetable Oil, For Frying

Preparation Instructions

In a small sauce pan, boil the apple cider down until it is reduced to 1/4 cup. Allow to cool.

In a large bowl, cream together the butter and sugar until fluffy. Beat in the eggs. Beat in the buttermilk and reduced apple cider.

In a medium bowl, whisk together 3 1/2 cups of the flour, the baking powder and soda, and the cinnamon, nutmeg, cardamom, and salt. Add the dry ingredients to the wet ingredients until combined. The dough will be very sticky.

Transfer the dough to a floured surface and knead, adding in the additional flour (you may not need the full remaining 2 cups), until the dough is no longer sticky. Roll out the dough to 1/2″ thickness, and using a 1″ cutter, cut out the doughnut holes. Re-roll the scraps of dough and continue cutting until there is no dough left.

In a pan with 3" of oil  Fry several doughnut holes at a time, turning occasionally, until they are browned and cooked through. Remove the cooked doughnut holes to a paper towel-lined plate. Immediately coat them in the cinnamon-sugar mixture.
Put in a white lunch sack, deliver to neighbors before your belly aches..... and it will ache. But man the house will smell like fall.

We had still-warm pumpkin donuts up at Green Bluff this year and Annabelle said they were the
" goodest thing she'd ever tasted..." I have never made them before, but I want to try them out sometime. This recipe looks and sounds yum. But donuts intimidate me!
